Yummy Avocado Brownies
What you need:
- 1 large avocado
- 3 eggs
- 1/2 cup coconut flour
- 1/2 cup unsweetened dutch-processed cocoa powder
- 1/2 cup maple syrup
- 1/2 cup unsweetened applesauce
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1/4 teaspoon sea salt
Combine the avocado, applesauce, maple syrup and vanilla extract in a blender of food processor. Blend until ingredients are well-combined and mixture has no clumps. Transfer to a large bowl and mix in eggs. Add the coconut flour, cocoa powder, baking soda and sea salt and stir until all ingredients are well-mixed.
Add the batter to a coconut oil-greased 8×8 inch baking dish and bake in a pre-heated oven (350F) for 20-25 mins. Allow to cool for at least 20 minutes. Cut into squares and enjoy!
Keep brownies in an airtight container, shelf life is 2 days in room temperature. Store in the refrigerator for a longer shelf life.
Grilled Honey and Lime Pineapple
What you need:
- 1 pineapple
- 4 tablespoons unsweetened shredded coconut
- 2 tablespoons honey or maple syrup
- 1 tablespoon lime juice
- Coconut ice cream or sorbet
Slice the pineapple into 3/4 inch slabs. This makes about 8 pieces. You can choose to keep the skin on or not, depending on your preference. Combine the honey and lime juice in a bowl and brush the mixture onto the sides of each slab of pineapple. Cook pineapples on greased grill over medium heat until grill marks appear, about 3 minutes per side. Remove from heat and transfer to serving plates.
